If you catch United Soybean Board Chairman Jim Stillman in the kitchen, chances are he’s whipping up one of his favorite soy-based dishes. Join Stillman in making one of his favorites – Overnight Egg Casserole.
Jim Stillman’s Overnight Egg Casserole
-1 ½ cups grated cheese
-1 cup soy crumbles
-2 ½ cups soy milk
-1/8 teaspoon onion powder
-1 ½ teaspoons dry mustard powder
-3 slices of bread, cubed
Beat eggs together. Add in soy milk, onion powder and dry mustard powder, combine ingredients.
Next, spread bread cubes into greased pan.
Spread soy crumbles over bread, then top with grated cheese.
Pour egg mixture evenly over bread, soy crumbles and cheese.
Cover dish and place in refrigerator for at least 6 hours.
After 6 hours, preheat oven to 350 degrees. Remove casserole from refrigerator, uncover and bake for one hour.
